Job title: Sous Chef
Salary: £30,000 - £40,000
Location: Holt, North Norfolk
Job Type: Full‑time, covering lunch and dinner service. This role includes evenings and weekends on a rota basis, with a mix of straight and split shifts.
The Opportunity
Our client is a privately owned, family‑run hotel set in a stunning quayside location, offering panoramic views across the estuary and salt marshes within an officially designated Area of Outstanding Natural Beauty. With over 60 bedrooms, spacious lounges, a bar, restaurant, games room and a leisure area featuring an indoor pool, steam room, sauna and mini gym, the hotel proudly holds a 4‑AA‑Star rating. They are now looking for a skilled Sous Chef to join their team - someone who can bring creativity, consistency and solid kitchen leadership to a high‑quality, fast‑paced environment. It’s a great opportunity to work with fresh ingredients, contribute to menu ideas and help uphold the exceptional standards the hotel is known for.
Responsibilities
- Work closely with a great kitchen team to prepare, cook and present food to an exceptionally high standard in line with the hotel’s expectations.
- Support the Head Chef with the smooth day‑to‑day running of the kitchen.
- Ensure a safe and effective food operation, maintaining all health & safety and food hygiene standards.
- Lead the team during service when required and support junior chefs with training and development.
- Assist with menu planning, specials and seasonal dishes.
- Manage stock levels, ordering and waste control to maintain efficiency.
- Maintain excellent organisation and ensure the kitchen runs efficiently during busy lunch and dinner services.
Experience / Skills required:
- Previous experience in a busy kitchen environment is beneficial.
- Food hygiene certification is preferred, and a strong understanding of food hygiene standards is essential.
- A flexible, professional and friendly manner with the ability to work well within a team.
- Strong organisational skills and the ability to work efficiently under pressure.
- Experience preparing fresh, high‑quality dishes and maintaining consistent standards.
- Confidence to step up and lead the kitchen in the Head Chef’s absence
About you:
- You will have experience working in a similar environment, ideally with a fine‑dining or high‑quality fresh‑food background.
- Passionate about fresh, seasonal ingredients and creative presentation.
- Strong attention to detail with excellent food safety and hygiene standards.
- A great team player with strong communication skills.
- Flexible, proactive and able to adapt well in a busy kitchen.
