Sous Chef – High-End Restaurant | Mid-Sussex Area
Full-Time | £40,000 – £45,000 per year + Tips & Bonuses

This established venue operates a Rosette-standard seasonal menu featuring modern British cuisine, alongside daily specials. With 150 covers and a busy calendar that includes á la carte service, large group bookings, weddings, and buffets, this role offers exceptional variety and a chance to truly showcase your talent within a supportive, family-run business.
Operational Management: Responsible for the day-to-day running of any given kitchen section within a brigade of nine chefs.
Quality Assurance: Ensure the quality of food is consistently of an exceptional standard, maintaining a heavy emphasis on fresh ingredients and consistency.
Menu & Development: Assist the Head and Senior Sous Chef in the development of both the seasonal menus and daily specials.
Team Leadership: Assist in the training and development of junior members of the kitchen team.
Financial & Ordering: Help with daily ordering, managing stock usage efficiently based on menu planning and business levels.
Compliance: Maintain rigorous standards of health and safety and hygiene regulations within the kitchen.
Experience: Proven background in high-volume, quality food service (Gastro Pubs or Hotels preferred).
Skills: Exceptional innovation, creativity, and attention to detail.
Work Ethic: Thrives under the pressure of a fast-paced kitchen environment.
Mobility: Candidates should ideally possess their own transport due to the location.
