Job Title: Sous Chef
Establishment: Gastro Pub
Location: Hungerford
Salary: £32,000 - £33,000 + Service Charge
Hours: Permanent, Full-Time Position

Pineapple Recruitment is partnering with a prestigious contract catering company to find an experienced Sous Chef for a renowned fresh food dining gastro pub. This establishment is celebrated for its culinary innovation, blending traditional flavors with contemporary techniques to create visually stunning and delectable dishes.

Responsibilities:
 

  • Daily Operations: Oversee daily kitchen operations, particularly in the Pastry Section, and deputise for the Head Chef during absences.
  • Preparation and Cooking: Prepare, cook, and present dishes across Cold Section, Breakfast, Hot Kitchen, Pastry Section, and Coffee Shop as per standards.
  • Collaborate with the Head Chef to develop innovative and seasonal menus that captivate guests.
  • Lead the pastry section, ensuring consistency, quality, and artistic presentation in all dessert offerings.
  • Assist in the preparation and cooking of dishes across various kitchen sections, including the hot kitchen when required.
  • Supervise and mentor kitchen staff, providing training and guidance to maintain a cohesive and high-performing team.
  • Monitor inventory levels, order supplies, and manage food costs while maintaining the highest quality standards.
  • Uphold strict hygiene, health, and safety regulations, ensuring compliance with all relevant standards.
  • Support the Head Chef with administrative tasks, including paperwork, stock control, and cost analysis.
  • Foster positive communication with front-of-house staff to ensure seamless service and exceptional guest experiences.
  • Stay updated on industry trends, incorporating new ideas into menu development and kitchen operations.
  • Lead by example, promoting teamwork, professionalism, and a positive work environment.

Qualifications:

  • Proven experience as a Sous Chef or similar role in a reputable establishment, preferably within a fine dining or hotel environment.
  • Culinary degree or equivalent certification from a recognised culinary institution.
  • Strong expertise in culinary techniques, including dessert preparation and kitchen management best practices.
  • Leadership skills with the ability to inspire and motivate a diverse team.
  • Excellent communication and interpersonal abilities, fostering collaboration across departments.
  • Exceptional organisational skills with the ability to multitask and prioritise in a fast-paced environment.
  • Attention to detail and a commitment to maintaining high standards of quality and consistency.
  • Proficiency in food safety and sanitation protocols, with certification in food handling safety.
  • Flexibility to work evenings, weekends, and holidays as required by the hospitality industry.
