The Opportunity

A prestigious 5-star hotel on the East Sussex coast is seeking a talented and passionate Chef de Partie – Pastry to join its award-winning kitchen brigade. This is a rare opportunity to work in a luxury hospitality environment, producing high-quality desserts, breads, and patisserie across multiple outlets.

You’ll be the second pastry chef in a dedicated team of four, supporting the Head Pastry Chef and occasionally deputising in their absence.

Key Responsibilities

• Assist in the day-to-day running of the pastry section, ensuring smooth operations and exceptional output.
• Prepare and present high-quality desserts, breads, and patisserie for restaurants, lounges, room service, banqueting, and events.
• Maintain high standards of cleanliness and organisation throughout the kitchen.
• Monitor and report stock levels, ensuring adequate supplies for current and upcoming business needs.
• Minimise waste and use ingredients and equipment efficiently.
• Stay up to date with industry trends and techniques, contributing to the development of the section.
• Support and train junior team members, apprentices, and trainees.
• Attend internal training sessions and apply newly acquired skills to your role.

Ideal Candidate Profile

• Previous experience as a Pastry Chef in a high-quality, fast-paced kitchen—ideally within the luxury hotel sector.
• Strong attention to detail and a creative flair for presentation.
• Calm and professional under pressure, with excellent communication skills.
• Holds a Basic Food Hygiene and Level 2 Food Safety Certificate (minimum).
• A proactive, positive attitude and a genuine passion for pastry.
