Role Overview:
As the Head Chef, you'll play a crucial role in leading the kitchen team to uphold the highest standards of food quality and operational efficiency. You'll be involved in every aspect of the kitchen, from cutting fish and cooking rice to rolling sushi and maintaining a vibrant, energetic kitchen environment. This role requires a natural leader who thrives in a fast-paced setting and is committed to providing outstanding experiences for both guests and team members.
Key Responsibilities:
- Food Quality: Maintain brand standards, conduct quality checks, manage food ordering, and adjust production based on sales data.
- Service Quality: Handle feedback, train and mentor staff, and ensure top-notch customer service.
- Profitability: Oversee inventory, manage food ordering and kitchen labour, control costs, and generate labour reports.
- Timeliness: Ensure prompt food preparation, efficient operations, and implement new food initiatives.
- Health, Safety, and Cleanliness: Adhere to safety standards, conduct cleanliness checks, and manage equipment maintenance.
- Staff Performance: Evaluate and develop team members, address performance issues, and boost team morale.
- Policy Adherence: Ensure compliance with company policies, update employee records, and set an example for adherence.
- Communication: Provide updates to the General Manager, conduct team briefings, and maintain clear communication through reports.
- Reporting: Track and report on food and labour costs, and special functions, and perform P&L analysis.

Requirements:
- Proven experience as a Head Chef with a solid background in kitchen operations.
- Ability to create recipes to brand specifications and manage food costs.
- Proficiency in interpreting spreadsheets and P&L statements.
- Expertise in all kitchen positions with a passion for Japanese cuisine.
- Strong communication, problem-solving, and multitasking skills.
- Ability to thrive in a fast-paced environment with a positive attitude.
