Job Description

Our Client is an independent business operating pubs, restaurants, coffeeshops, and farm shops as well as serving our online and wholesale customers. Opened in 2014, Our client now runs 15 sites across Berkshire and Hampshire, with their strong community-led values, and people-first approach separating them from competitors

General Purpose

To manage the day-to-day running of the pub, ensuring appropriate staffing levels on each service,

interacting with the customers to promote Honesty and delivering excellent levels of service.

MAIN AREAS OF RESPONSIBILITY

● To manage the forecasting of the pub’s operation (planning the FoH Shifts, restaurant, bar and

coffee shop):

o Based on bookings and reservations

o General forecasting

● Financial and Operational requirements:

o To set operating goals and objectives

o Prepare and implement standard operating procedures

o To ensure cash management procedures are completed accurately

o Set and monitor budgets

o Analyse budget variances and take corrective actions

o Implement and oversee cost saving measures

o Plan and monitor restaurant sales and revenue

o Prepare and analyse management reports

o Determine and execute operating improvements

o To identify and evaluate competitors

o Keep current with trends in the restaurant industry

o Negotiate purchase prices and develop preferred suppliers

● To organise the bar resources:

o Purchases and deliveries (suppliers)

o Stock control (purchases)

● To manage the FoH team, including:

o Rotas and shift patterns;

o Holiday management;

o Disciplinary and grievance procedures;

o Continuous training and development.

o Leadership of FOH Supervisors

● To produce a monthly report (KPI’s), and attend manager’s meetings:

o Informing Senior management of covers, reservations and customer satisfaction

● To liaise with the Head Chef and the Kitchen team, ensuring:

o New menu production;

o Analyse food and beverage costs and assign menu prices

o Management of Events and Large bookings;

o FoH training and development.

● To implement and maintain H&S and Fire Evacuation procedures.

● To oversee the hotel reservations, bookings, and group reservations including:

o Check ins and Checkouts

o Invoicing and payments

o Housekeeping (rotas, room checks and procedures)

● To oversee and support the coffee shop team on a day-to-day basis:

o Ensuring stock and staff levels are adequate

o Liaising with the coffee shop supervisor (stocks, staffing, opening hours, etc)

● To ensure preventative maintenance is carried out, and that all the issues (breakages, repairs,

etc) are fixed in a timely manner

SKILLS AND RESPONSIBILITY

● Availability to work on a rota basis (5 days out of 7, including weekends and bank holidays)

● Availability to work through 3 different shifts (07h45-16h15 or 12h00 - 20h30 or 14h00-22h30

● Interest in food and beverage products (full training is provided as it is necessary that the team

knows the product range, menus, etc)

KEY COMPETENCES

● Team Player

● Computer literate (experience on EXCEL, WORD, Email and Internet)

● Previous experience in working in a hotel/pub with rooms

● Able/Interested in working in a fast paced environment where quality, standards and customer’s

satisfaction are priorities.

● Key leadership skills around people management and delegation thereof
