Job Title: Pub General Manager

Salary: £35,000 + Monthly Bonus + Share of Tips

Location: Near Highclere, Berkshire

Reporting To: Group General Manager

Pineapple Recruitment is seeking a passionate and experienced Pub General Manager for a picturesque rural gastro pub near Highclere. This historic inn, dating back to the 1640s, has been meticulously refurbished and offers well-presented hotel rooms, a charming courtyard garden, and a welcoming pub and restaurant.

Role Overview:

The Pub General Manager will oversee the daily operations of the bar, restaurant, coffee shop, and hotel, achieving revenue targets while ensuring excellent customer service.

Key Responsibilities:

  • Operational Planning: Schedule shifts for FoH staff based on bookings and reservations.
  • Resource Management: Manage bar resources, including purchases, deliveries, and stock control.
  • Team Management: Oversee the FoH team, including rotas, holidays, disciplinary procedures, and training.
  • Financial Management: Prepare monthly reports, establish KPIs, and analyze financial data.
  • Collaboration with Kitchen Team: Work with the Head Chef on menu production, event management, and training.
  • Health & Safety: Implement H&S and Fire Evacuation procedures, maintaining accurate records.
  • Hotel Management: Oversee hotel reservations, check-ins, checkouts, invoicing, and housekeeping.
  • Coffee Shop Management: Ensure adequate stock and staffing levels.
  • Maintenance: Ensure timely maintenance and repair of the establishment.
  • Goal Setting: Set and assess team goals and objectives.
  • Training: Prioritize staff training to enhance revenue and customer satisfaction.
  • Event Management: Plan and manage events to increase revenue.
  • Customer Service: Address customer queries and complaints promptly.
  • Cash Management: Ensure accurate cash handling procedures.
  • Marketing: Organize marketing and promotional activities.
  • Industry Trends: Stay updated with restaurant and pub industry trends.

Skills and Experience:

  • Previous experience in food and beverage management
  • Knowledge of beverages and food preparation
  • Experience in staff management and development
  • Understanding of basic accounting principles
  • Ability to analyze financial data
  • Planning and forecasting skills
  • Inventory and cost control experience
  • Proficiency in relevant computer applications
