Salary: £31,253.47 per annum

About the Role
Join a prestigious Cambridge college as a Pastry Chef de Partie, where you’ll play a key role in crafting exceptional desserts and baked goods for Fellows, students, staff, and guests. Reporting to the Sous Chef and Head Chef, you’ll take charge of the pastry section, ensuring the highest standards of preparation, presentation, and hygiene.
Key Responsibilities
- Pastry Section Management: Take full responsibility for the pastry section, including desserts, breads, cakes, and other baked items, ensuring smooth and efficient operation.
- Creative Preparation: Prepare and present a variety of pastries and desserts to the highest standards, following recipes and seasonal menus.
- Team Collaboration: Work closely with the wider kitchen team to ensure coordinated and timely service.
- Quality Assurance: Maintain consistency in flavour, texture, and presentation across all pastry items.
- Health & Safety Compliance: Adhere to all food hygiene and safety standards, including HACCP and COSHH protocols.
- Stock & Inventory: Assist with stock rotation, ordering, and inventory checks for the pastry section.
- Mentoring: Support the training and development of junior pastry staff and apprentices.
- Service Readiness: Ensure the pastry section is fully prepped and ready for each service, with all mise en place completed.
Essential Qualifications
- NVQ Level 2 or 3 in Professional Cookery (with a focus on patisserie preferred)
- Basic Food Hygiene Certificate
- HACCP and COSHH awareness

- Strong patisserie and baking skills
- Excellent organisational and time management abilities
- Team player with effective communication skills
- High attention to detail and a passion for quality
Experience
- Minimum 2 years’ experience in a professional pastry kitchen
- Experience in a high-volume or institutional setting is desirable
